Authentic Vegetarian Paella

When Debbie and I were in Spain on our honeymoon we learned a wonderful paella recipe from Rick's sister who we stayed with in Valencia. I finally wrote up the recipe so I could share it, here is an adobe PDF document or a word document. This is my new favorite recipe, aside from the Indian cusine that we make all the time. It is a great dish to make for a party and feeds several people, although the preparation time can be on the long side.
