After all the cider work, pressing and fermenting, finally we get to test the blending before final conditioning. We experimented with adding various amounts of brown sugar, cane sugar, corn sugar, maple syrup, honey, raw honey. Finally, after multiple experiments with a graduated cylinder and other repeatable measurement devices we settled on a mixture of 100ml cider, 1/4 tsp cane sugar, and a heaping 1/8 tsp of fireweed honey. Now, I'll scale this up to the 15 gallons of cider I have waiting in the basement and see how it goes on a larger scale.
We'll call it "Amy's" in honor of Amy Costanza who we hope will really like the blend we chose.
